RippedTogether’s Baja Fish Tacos are perfect for Clean Eating!
These tacos are high protein, low carb, and delicious!
- Tilapia Fillets
- Salt and Pepper
- Fresh Limes
- Low Carb Tortillas
- 1 can of Black Beans
- 1 cup fresh grilled corn
- 1/2 cup seeded and diced tomatos
- 1/4 red onion chopped
- 1 jalapeno seeded and chopped
- handful of fresh cilantro chopped
- 1 tsp. cumin
- juice of 2 limes
- salt and pepper to taste
Preheat your grill while you prepare the baja salsa. combine all of the ingredients, cover, and set aside. Season tilapia with salt and pepper. On an oiled grate, grill tilapia for 3 to 4 minutes on each side on med-high heat. Remove and squeeze fresh lime over the fish. Lower the grill heat and toss on tortillas for about 1 minute just to heat through. Assemble your tacos! Place fish on tortilla, top with salsa and bundle it up!
*The tortillas are obviously optional, but if you do decide to “bundle it up” make sure that you are choosing the low carb tortillas! NOT to be confused with “Whole Wheat” which is not low carb at all. You can find low carb wraps in most grocery stores these days. Sometimes they also say “High Fiber” *
